The goal of the these lectures is to give a rigorous derivation of Ricci flow starting from non linear Sigma models, within the framework of algebraic quantum field theory. In the first talk we outline the algebraic approach to the quantization of a field theory on a Riemannian manifold. Particular emphasis is given to local covariance and to the structural properties of the algebra of observables.
